Until recently in the US, salt has been a humble and commonplace way to help food taste a little better. No more! Exotic salts from around the world are making their way into our kitchens and restaurants, and imaginative uses of salt are cropping up in everything from chocolate to ice cream. See what salt has to offer as we learn how different types of salts are produced around the world and why they taste and look a certain way. We'll compare the nuances of the world's best salts, then put them to the test as we sample gravlax (salmon preserved in salt), kimchi (pickled vegetables), salt-baked chicken, gelato with olive oil and sea salt, and chocolate crostini with sea salt. Along the way, we'll discuss salt's vital part in people's diets, culture, and economy. Join us, and learn to make the most out of this precious mineral in your own kitchen! This class requires 48 hour advance registration.
